I love to can tomatoes.
I make a jam that is Blackberries (say 6 pints)/Lemon Juice & Zests/Turbinado Sugar/One entire Vanilla Bean Pod + Pectin; that is fantastic actually. I scrape out the vanilla seeds but also put the pods in with the fruit while I cook it (then fish them back out!). People freak over this.

I probably can more applesauce than anything else, but my favourite thing to preserve is red currant jam. I love the tartness, the colour and how easy it is to make. It's great on toast and I prefer it to cranberry sauce when it comes time for turkey dinner.

We froze tomatoes last year and used them in stews all winter long, it was lovely.

My favourite thing to can is red currant jam. It's easy to make, the colour is gorgeous, and the tart flavour is great on buttered toast. It's also a great substitute for cranberry sauce to accompany a turkey dinner.

I like canning salsa! (And my email's in my profile.)
I love preserving apples in all sorts of ways--applesauce, apple butter, apple jelly, spiced apples, apple pie filling, pretty much any way I can get them into jars.

My favorite thing to can is tomato puree, bar none. It always gets eaten before the next summer rolls around. Thanks for the giveaway opportunity! hampiesandwiches at gmail
I haven't canned yet but I do freeze seasonal fruit to use in smoothies. I freeze them on a cookie sheet and then store in canning jar I. The freezer.

I second salsa! There's just something so great in opening a jar in the dead of winter and indulging in summer's fresh produce. So yum!

I can
apricot jam. My friend has 7 big old mature apricot trees and she lets us come over and pick to our heart's desire. We picked over 15 gallons of organic apricots and made 30 jars of jam and froze 14 pies worth of fillings. Happiness is knowing you're stocked up on apricot jam and apricot pies!
Congratulations to Eileen of http://hampiesandwiches.blogspot.com/ - our winner! Please get in touch with your mailing address and we'll get your goodies in the mail to you right away. Thank you all for participating and wishing you all happy canning!
All the best,
Eve
