This winter has been so long, so cold, and so snowy that I've ended up doing a lot more baking than ever before in my life purely as a coping mechanism. It's just easier to face another dark and frigid morning with a freshly baked muffin or scone in hand, ya know? Plus, the heat from the oven makes the house a little bit warmer...
This Christmas, I received a SILPAT - a silicon baking sheet - from my dear bro-in-law, Michael. I admit that I was not sure quite what to do with it at first and stashed it in a drawer. But I pulled it out on a whim when I was making an apple tart with some leftover pate brisee a couple of months ago and was thrilled by its performance. It has since become indispensable.
Turns out that the SILPAT is a baker's best friend! Nothing sticks to it, it never needs to be greased, and it's super easy to clean (unlike a cookie sheet.) It's great for scones, cookies, tarts and more.
