You didn't mention whether you used the ramp bulbs, too, so I opted to use one shallot and the chopped ramp bulbs, plus added bacon in for good measure. This was delicious! As soon as I saw ...MMMMMMMMM! This was delicious! As soon as I saw the email with this recipe in it today, I knew I had to make it! Unfortunately Ramps are not available in Utah...so I substituted green onions, but it was still outstanding! I made a beautiful vegetable broth, which complemented this perfectly. Absolutely amazing, I loved how fresh the lemon made this...and how creamy it was. I'll be making this a lot more in the future. Best Risotto I've ever had, hands down!
